fried egg-in-a-hole, but in true erica fashion - I'm trading the "toast" for my  protein pancakes to make "pan-toast"! 🍳🥞 and because one version is never enough, I have 3 knock out versions for you to follow along. feel free to mix & match to make it your own!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

fried egg in a hole pan-toast

  1. make a batch of protein pancakes & cut a hole in the center to place egg inside (of course, keep it for eating!)
  2. grease skillet, then reheat pancake for 2-3 minutes on one side.
  3. flip pancake to other side & lower heat to low, then crack an egg in the center - holding the yolk in place to keep it in the center.
  4. let it cook for 1-2 minutes to let the white set.
  5. pour in a couple tablespoons of water, then add a lid & let cook until a very thin film forms over top for the PERFECT over-easy fried egg.

make your spread of choice

  1. using a food processor or immersion blender, add cottage cheese, monk fruit, caper juice, lemon juice, lemon zest, & salt.
  2. choose your variation of choice, then blend together.

assemble your pan-toast

  1. remove egg in a hole pan-toast from skillet, then add your spread of choice + any additional toppings you like (look at the notes section for my wonderful combos!)

Notes

  1. avocado pan-toast:
    1. add avocado to spread
    2. top with chicken sausage + maple keto granola 
    3. drizzle with siete jalapeño botana sauce
  2. buffalo pan-toast:
    1. add primal kitchen buffalo sauce to spread
    2. top with the new primal buffalo chicken meat stick + buffalo ranch protein snack mix
    3. drizzle with extra buffalo sauce
  3. pesto pan-toast:
    1. add basil best to spread
    2. top with prosciutto + feta + veggies of choice
    3. drizzle with kosterina fig balsamic vinegar
