Ingredients
- 4 cups4 cups4 cups Lettuce, Spring Mix Salad Greens
- 1 cup1 cup1 cup Pico de Gallo
- 1 cup1 cup1 cup Mexican-Style Street Corn - Alexia Foods
- 111 Black Beans, 1 can
- 222 Bell Pepper, diced
- 111 Avocado, sliced
- .25 cup.25 cup.25 cup Chipotle Ranch - SideDish, or other Spicy Ranch Dressing
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start by making my Fresh Pico de Gallo, bonus points if you already prepped this for the week, I promise you wonu2019t regret it!
- Chop your green pepper and dice your avocado.
- Prepare your Alexia Street Corn, follow the instructions on the box. You can also sub this for canned corn, frozen corn or street corn from scratch if you’re feeling fancy.
- Drain and rinse your black beans.
- Mix all ingredients into a large bowl and drizzle with Whole Foods 365 Spicy Ranch dressing.
