Biscoff and White Chocolate Blondies (Vegan)
These blondies are an irresistible combination of Biscoff cookies, white chocolate chips, and a hint of cinnamon. They are moist, flavorful, and not shy with the sweet; a little goes a long way. Ingredients

- 16 Tbsp16 Tbsp16 Tbsp Plant-Based Butter, (Earth Balance Vegan Buttery Sticks)
- .25 tsp.25 tsp.25 tsp Baking Powder

- 1 Tbsp1 Tbsp1 Tbsp Vanilla Extract

- .5 cup.5 cup.5 cup Almond Milk Yogurt, (any plant-based yogurt will work)
- 0.25 tsp0.25 tsp0.25 tsp Cinnamon, Ground

- 0.75 cup0.75 cup0.75 cup Biscoff Classic Cookies - Lotus Biscoff, - roughly chopped (about 5 cookies + extra for the top))

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350F and prepare an 8×8 square pan by lining it with parchment paper.
- Roughly chop up the Biscoff cookies and set them aside.
- Melt the butter and set it aside.
- To a small bowl, add the flour, baking powder and cinnamon; whisk to combine and set aside.
- To a medium bowl, add both sugars and the melted butter; whisk for one minute.
- Add the vanilla extract and yogurt; whisk for another 30 seconds to a minute.
- Add the dry ingredients to the wet ingredients and whisk just until combined and no more flour can be seen.
- Add the roughly chopped Biscoff cookies and white chocolate chips and fold them in just until incorporated.
- Add the batter to the prepared pan, spread it out evenly, and sprinkle the extra Biscoff cookie pieces and white chocolate chips over the top.
- Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the blondies to cool in the pan for 20 to 30 minutes before transferring them to a cooling rack.
- Store the blondies in an airtight container at room temperature.
