If you're a coconut lover, these nutritious balls are perfect for you! Not only are they beautiful and delicious, but they also possess anti-inflammatory and antioxidant properties. Spirulina, a cyanobacterium commonly known as blue-green algae, represents one of the oldest forms of life on Earth. Growing in both fresh and saltwater sources, spirulina is renowned for its nutritional value, boasting high protein content, essential amino acids, vitamins (exceptionally high amounts of vitamin B12), beta-carotene, and other pigments. Additionally, it contains essential minerals such as iron, calcium, and phosphorus, along with essential fatty acids and polysaccharides.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place all the ingredients in a bowl except the chocolate.
  2. Mix the ingredients thoroughly with a spoon and then use your hands.
  3. Shape the mixture into balls, each about the size of a truffle, and place them on a plate. Freeze them for an hour.
  4. Fill a medium saucepan about halfway with water and bring to a boil over medium-high heat.
  5. Place the chocolate in a heatproof bowl that fits over the saucepan without touching the water.
  6. Once the water reaches a boil, turn off the heat and set the bowl in the saucepan. Allow the chocolate to soften a bit, then start stirring to help it melt completely. Continue mixing until smooth.
  7. Cover the truffles with the melted chocolate and return them to the freezer until the chocolate hardens.
