Chicken and cheese puff pockets (Edit recipe)

Flaky golden puff pastry filled with seasoned chicken and cheese baked until crisp on the outside and cheesey inside.  Savory and perfect as a handheld bite or party snack.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a sautee pan, heat oil over medium heat and add oil.
  2. Sweat onion and garlic until translucent then add chicken, seasonings and cook for 5 minutes.
  3. Add flour and stir. When it forms a paste, add the heavy and mix. Cook for 3 minutes. Remove form the hat and set aside to cool.
  4. Add cheese and parsley. Taste and adjust seasoning if needed.
  5. Preheat oven to 400 degrees.
  6. Add flour to surface and lay the puff pastry sheets. Cut each sheet into 6 even squares. Place an even amount of filling in the center of each square. Brush some egg wash around each square then place the other sheet of puff pastry ontop. Press the edges using a fork to secure the pocket.
  7. Transfer the pockets onto a parchment lined baking sheet and brush with the remainder of egg wash. Bake for 20 mins until golden brown. Serve and enjoy!
