These Chocolate Dipped Flourless Peanut Butter Cookies are a naturally gluten-free take on a family favorite cookie! Soft and chewy, super pretty with a criss cross design, then topped off with a yummy chocolate dip.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350u00b0 and line a baking sheet with parchment paper.
  2. Mix peanut butter, coconut sugar, egg and vanilla in a large bowl until a dough forms.
  3. Form into balls(I had 18- give or take depending on what size the balls are), then flatten with a fork in a criss cross design.
  4. Bake at 350u00b0 for about 10-12 minutes or until edges are golden.
  5. Let cool before dipping in chocolate.
  6. Melt 1 tsp coconut oil with the chocolate chips. Microwave in 15 second intervals, stirring in between, until completely melted and smooth.
  7. Dip half the cookie into the chocolate then sprinkle with sea salt. Store in the fridge in an airtight container.
