Cranberry Almond Bars (Paleo)
These are a quick and easy bar but oh so festive. The fresh cranberries help give these paleo bars a holiday flair in look and flavor.
Ingredients
Crust
- 2 cups2 cups2 cups Almond Flour
- .25 cup.25 cup.25 cup Tapioca Starch, or Arrowroot flour
- .25 cup.25 cup.25 cup Pure Maple Syrup
- .25 cup.25 cup.25 cup Coconut Oil, or melted ghee
Fruit
- 2 cups2 cups2 cups fresh Cranberries, Rinsed
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Orange Zest
- 1 Tbsp1 Tbsp1 Tbsp Orange Juice
- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch, or Arrowroot flour
- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oven to 365 degrees. In a small bowl mix the crust ingredients together, it will be slightly crumbly.
- In a different small bowl mix the fruit ingredients together and stir to combine.
- Using olive oil or butter spread a good coating in a 8x8 pan. I prefer glass but any will work.
- Using hands press 3/4 of the crust dough in the pan and press down until in a smooth even layer.
- Evenly spread the fruit mixture on the crust.
- Using hands crumble the remaining crust mixture on top.
- Bake for 40 minutes, turn pan half way through.
- Let cool for 15 minutes before serving.
Notes
I have used guava juice in this recipe for a fun tropical twist.
