These creamy mashed potatoes that are perfect for any weeknight or holiday dinner. They are easy to make and a bit indulgent but if you are watching calories, it's easily adaptable.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel and cut the potatoes into large even chunks and place them into a large dutch oven or stockpot.
  2. Add 8 cups of water and 1 tsp of salt to the water. Make sure the water covers the potatoes and they have room to move as they boil.
  3. Bring the water to a boil and cook the potatoes until they are fork tender about 30 minutes.
  4. Drain the potatoes and return them to the same stockpot you used to cook them in. Turn on the heat and give them a couple quick stirs to dry them out a bit. Then turn off the heat but leave it on the burner and continue to assemble. This way it stays warm.
  5. Using a potato masher or potato ricer, mash the potatoes until they are starting to come together.
  6. Add 1/2 cup of warmed heavy cream, 3 tbsp of room temperature salted butter, and 1-2 tbsp of room temperature cream cheese(optional), and the black pepper. Mix until the potatoes are creamy, smooth and everything is combined.
  7. Taste for flavor and add extra salt or a bit more cream if needed.
  8. Top with extra pats of butter and chives if desired.

Notes

You can use russet or Yukon gold potatoes. A potato ricer makes a more creamy mashed potato. If you want a less thick mashed potato use a bit more cream. You can reduce calories by using 1/2 & 1/2, whole milk, 2% or non-dairy milk if needed.
