Crispy Roasted Tater Hard Tacos
I love a good hard taco moment! They're so nostalgic and fun to eat! Creamy refried beans, seasoned & roasted taters, and all the toppings! Let's do Taco Tuesday in under 30 minutes for a weeknight win!
Ingredients
- 10 whole10 whole10 whole Taco Shells, I used Old El Paso Ranch Blasted
- 398 ml398 ml398 ml Refried Beans

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 3 whole3 whole3 whole Yellow Potatoes, chopped (smaller chop)
- 1 tsp1 tsp1 tsp Chili Powder, Mexican Chili Powder
- 1 tsp1 tsp1 tsp Meat & Potatoes Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Tex Mex Seasoning
- 1 tsp1 tsp1 tsp Kashmiri Chili Powder

- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe

- 1 head1 head1 head Lettuce, Romaine, cut into shreds, washed & dried
- 1 cup1 cup1 cup Aged Cheddar Cheese, shredded (more if needed / desired)

- 1 whole1 whole1 whole Salsa, I used a spicy Taquera Style
- 2 whole2 whole2 whole Green Onion (Scallion), sliced

- 1 whole1 whole1 whole Cilantro, garnish
- 1 whole1 whole1 whole Sour Cream, Garnish ( a dollop or two per taco)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 425 F
- Toss your chopped potatoes with the EVOO and seasonings. Once combined, transfer to a parchment lined baking sheet in a single layer & season liberally with salt & pepper. Once preheated, bake your potatoes 25 - 30 minutes, flipping a couple times until tender with some nice crisp action. Once cooked, taste & adjust with salt if needed to finish.
- As your potatoes cook, empty your beans into a small, covered pot set to medium low and warm through thoroughly.
- For service, start by spreading beans in your taco shells followed by a scoop of your taters. Top with some shredded cheddar, a spoonful of your salsa, shredduce, a dollop of sour cream, and a sprinkle of green onions & cilantro. Serve & ENJOY!
