Deli-Style Ham and Pickle Cottage Cheese Toast on Keto Cottage Cheese Mug Bread
Ham and pickle cottage cheese toast is my high protein, low carb “make it in minutes” breakfast that tastes like a deli plate. It’s creamy cottage cheese, salty deli ham, crunchy dill pickles, and a sprinkle of everything bagel seasoning on a keto toast base. I build it on my Keto Cottage Cheese Mug Bread, so it stays higher protein and is more keto-friendly than regular bread.

Notes
Bread note: This recipe uses my Cottage Cheese Mug Bread as the base. Make that first, then slice it into 2 pieces for these toasts. Pickles: Use dill pickles (not sweet) for the best keto-friendly flavor. Ham swaps: Turkey, chicken, or roast beef deli slices work great too. Make it tangier: Add 1 tsp yellow mustard or a squeeze of lemon on top. Best fresh: This one is best eaten right away so the bread doesn’t soften.
