Egg Bites
This egg bite recipe is the perfect breakfast to meal prep for the week. You can chop up the veggies and add them to the mix however I had to blend them because if my kids see them, they won’t touch it. These were so delicious and so simple. plus they’re packed with protein and healthy fats to start their day.
Ingredients
- 3 whole3 whole3 whole Eggs
- 1 cup1 cup1 cup Zucchini
- 0.5 cup0.5 cup0.5 cup Carrots
- 0.333 cup0.333 cup0.333 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Whole Milk
- 1 cup1 cup1 cup Cheddar Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350°.
- First, remove the skin of your zucchini and chop it up.
- Add the zucchini, carrots, eggs, cottage cheese, and milk to a blender. Blend into creamy.
- Pour into a muffin pan. Add your cheese to each muffin.
- Place the pan in the oven and bake for 18 to 20 minutes. Do you want the eggs to set.
- Enjoy
Notes
You can add any vegetables you would like. I added two that really wouldn’t change the color. You can add spices if your kids prefer. I chose not to add spices to this mix because the cheese was flavorful enough.
