Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat to 175°C (350°F). Line an 8x4 inch loaf pan with parchment paper.
  2. Use a food processor or blender to blend the cottage cheese until smooth and creamy.
  3. In a large bowl, whisk together almond flour, whey protein, whole psyllium husk, baking powder, and salt.
  4. Stir in blended cottage cheese, olive oil, and apple cider vinegar. Mix to combine.
  5. Let the mixture sit for 5–10 minutes to thicken.
  6. Spoon the dough into the prepared loaf pan and smooth the top. Sprinkle with sesame seeds if desired.
  7. Bake for 40–50 minutes or until golden brown and a toothpick comes out clean.
  8. Internal temperature should reach 93°C (200°F).
  9. Let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Store in an airtight container at room temperature for up to 3 days, or in the fridge for a week.
  • Slice and freeze for later - just toast straight from frozen.
  • For best results, use fine almond flour and unflavoured whey isolate.
  • Herbs and spices like Italian seasoning, onion powder, or garlic powder can be added for extra flavor.
