Gluten-Free and Dairy-Free Chocolate Chip Cookies
Ingredients

- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/3 cup1/3 cup1/3 cup Brown Sugar
- 6 Tbsp6 Tbsp6 Tbsp Granulated White Sugar

- 1/2 cup1/2 cup1/2 cup Plant-Based Butter, softened to room temperature
- 111 Egg, at room temperature
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 1/2 cup1 1/2 cup1 1/2 cup Semi-Sweet Chocolate Chips, dairy-free chocolate chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 375 degrees F, and line two baking sheet with parchment paper.
- In a medium size mixing bowl, whisk together the flour and baking soda. I have eliminated any salt from this recipe because plant-based butter is usually salted. If you are using unsalted plant based butter, add 1/2 tsp fine salt to the dry mixture.
- In a large mixing bowl, combine the brown sugar, white sugar, and plant-based butter.
- Cream the sugar and butter together with a hand mixer. You can also do this in a standing mixer.
- Add in the egg and vanilla extract, and beat again on medium speed until evenly combined.
- Add in the flour mixture, and beat again, scraping down the bowl as needed, until the batter is evenly combined.
- Stir in the chocolate chips.
- Using a cookie scoop, scoop the cookie dough onto your prepared baking sheets, spacing about 2 inches apart.
- Bake the cookies in the center of the oven, on the middle rack. You can bake the sheet of cookies one at a time, or place another sheet of cookies on a rack directly below the middle rack.
- Bake for 12-14 minutes.
- Allow to cool, and enjoy.
