Gluten-Free Chocolate Lava Cake
Rich, decadent gluten-free lava cake with a molten chocolate center. Easy to make, perfect for Valentine’s Day or special occasions.
Ingredients
- 444 Eggs
- .5 cup.5 cup.5 cup Coconut Sugar, Sugar (Sub or sweetener of choice)

- .25 tsp.25 tsp.25 tsp Salt

- 6 Tbsp6 Tbsp6 Tbsp GF 1:1 Flour (I used King Arthur Measure for Measure)
- 4 Tbsp4 Tbsp4 Tbsp Coconut Oil
- 1 cup1 cup1 cup Chocolate Chips (Use Enjoy Life for dairy-free)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400u00b0. Grease ramekins. Optional: sprinkle each greased ramekin with a little sugar and dust with cocoa powder.
- Whisk eggs, sugar and salt in a large bowl.
- Melt chocolate chips and coconut oil together in a microwave safe bowl. 20-30 second intervals, stirring in between until smooth.
- Pour melted chocolate chips into the eggs mixture.
- Whisk in the flour until you have a brownie batter consistancy.
- Pour batter dividing evenly into the prepared ramekins. Bake for 10-12 minutes, watching closely not to overcook. The edges should be set and come out clean with a toothpick, but the centers will still look soft and gooey.
- Remove from the ramekins and serve immediately with fresh fruit, and/or ice cream.
