- Heat the Liquids: In a small saucepan, gently heat the chocolate cornmilk and cream over medium-low until hot and steaming (do not boil).
- Melt the Chocolate: Place chocolate chips in a heatproof bowl. Pour the hot cornmilk mixture over the chocolate. Let sit 2 minutes, then whisk until smooth.
- Finish the Base: Stir in the butter until fully melted and glossy.
- Flavor the Chocolate: Stir in tamari, vanilla, and half of the crushed freeze-dried grapefruit until fully incorporated.
- Chill: Cover and refrigerate until firm but scoopable, about 1–2 hours.
- Shape: Scoop about 1 tablespoon per truffle and roll gently into balls.
- Coat: Roll truffles in the remaining crushed freeze-dried grapefruit, pressing lightly so it adheres. Optionally, roll in cocoa powder.

Wow! I am actually trying to taste these in my mind right now. A must try for me!!!
I based these off the orange chocolate balls that you see at Christmas time. I didn’t have oranges, so I went with the grapefruit – sooo good! I made with semi-sweet chocolate too – just as good.
