These homemade healthier thin mints taste JUST like the real deal, but are gluten free, vegan and refined sugar free! If you’re looking for that nostalgic Girl Scout cookie taste, then you must make these and of course-put them in the freezer!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine cookie ingredients until dough forms, may be crumbly. Place in fridge for 15 minutes
  2. Preheat oven to 350 degrees Fahrenheit
  3. Place the dough on a piece of parchment or wax paper and cover it with another piece
  4. Roll out to desired thickness, use a small glass, I used a shot glass, to cut your cookies and place on prepared baking sheet
  5. Bake for 10-15 minutes and let cool completely
  6. Melt chocolate and coconut oil in 30 second intervals, stir in extract
  7. Use a fork to dip cookies in chocolate and place back on tray
  8. Place in freezer for at least 30 minutes and enjoy

Notes

Chocolate: I opt for a chocolate sweetened with unrefined sugar; some I recommend are Hu chocolate, Just Date, Oobli
