Healthy Carrot Cake Loaf
This healthy carrot cake loaf is the perfect recipe to whip up for spring. It's made in one bowl and is refined sugar free! It's made with crunchy pecans, shredded coconut, and raisins for the ultimate carrot cake in loaf form.
Ingredients
For the Carrot Cake Loaf
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup

- 0.5 cup0.5 cup0.5 cup Almond Milk, or any milk of choice
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.25 cup0.25 cup0.25 cup Applesauce, Unsweetened
- 3 Tbsp3 Tbsp3 Tbsp Plain Greek Yogurt
- 1 whole1 whole1 whole Flax Egg (1 tbsp ground flaxseed + 2.5 tbsp filtered water)
- 1 cup1 cup1 cup Carrots, shredded
- 1.333 cups1.333 cups1.333 cups All Purpose Flour, 1 1/3 cup + 3 tbsp all-purpose flour, spoon and level method
- 1 tsp1 tsp1 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 2 tsp2 tsp2 tsp Cinnamon, Ceylon

- 0.5 tsp0.5 tsp0.5 tsp Nutmeg Powder
- 0.5 cup0.5 cup0.5 cup Raisins, Sultana Raisins from Nutterie
- 0.333 cup0.333 cup0.333 cup Coconut, Shredded
- 0.5 cup0.5 cup0.5 cup Pecans, halved

For the Icing (optional)
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk, or any milk of choice
- 0.666 cup0.666 cup0.666 cup Powdered Sugar

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350F.
- Line a loaf pan with parchment paper and set aside.
- To a bowl, add all wet ingredients including shredded carrots and stir until just combined.
- Add all dry ingredients and mix well.
- Gently fold in sultana raisins, shredded coconut and pecan halves with a spatula until just combined.
- Pour batter into lined loaf tray, top with extra pecan halves and shredded coconut, and bake for 50 minutes, or until a toothpick comes out clean.
- Mix almond milk and powdered sugar together to create icing, if desired.
- Let cool for 10 minutes and pour over icing.
- Slice and enjoy!
Notes
How to store: Place loaf in an airtight container and store in the fridge for up to one week.
