- Prepare Pizza dough per my high protein pizza dough recipe directions
- Cover dough with parchment paper and then roll out into an oval/circle shape
- On half of the crust, spread the pizza sauce
- Mix together cottage cheese & ricotta cheese, season with italian seasoning, salt, & pepper
- Spread onto the pizza sauce
- Then layer on the veggies, pepperoni (if not doing vegetarian), & shredded cheese
- Fold the other half over and pinch all the way around to close the calzone and create a half circle
- Whisk your egg
- Transfer your calzone carefully to a baking sheet, brush with the egg wash and season with italian seasoning
- Bake for 10-12 minutes.
- Check at the 10 minute mark, you may want to flip the calzone over to ensure even cooking of the dough (and cook for another 2-3 minutes).
- Enjoy!
Notes
I like to use the Tuscan Italian Seasoning Blend on top of the egg wash. Have fun with the ingredients! I’ve used frozen fire roasted peppers in them and it was delicious! Just be sure to burn off any liquid from them first.
