- Heat olive oil in a large pot over medium heat. Add cabbage, onion, fennel, carrots, and garlic. Cook until just softened, about 5 minutes. Season with salt and pepper.
- Stir in collagen peptides and mix well.

- Add chickpeas and thyme. Simmer 15–20 minutes.
