Homemade Gluten-Free Pizza Crust

- 40 grams40 grams40 grams Oat Flour

- 15 grams15 grams15 grams Psyllium Husk, Ground
- 6 grams6 grams6 grams Active Dry Yeast
- 20 grams20 grams20 grams Brown Sugar, (divided: 10g for activating yeast, 10g for mixing with dry ingredients)
- 5 grams5 grams5 grams Salt

- 320 grams320 grams320 grams Water, warm (divided: 160g for yeast, 160g for psyllium)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 🍕 How to Make the Dough:
- In a small bowl, combine 160g warm water with the yeast and 10g brown sugar. Stir and let it sit until bubbly (about 5–10 min).
- In another bowl, mix the remaining 160g warm water with the psyllium husk powder. Stir and let it thicken into a gel—it happens fast.
- In a large bowl, whisk together the tapioca, millet, and oat flours with the salt and the remaining 10g brown sugar.
- Pour both wet mixtures into the dry ingredients. Mix with a spoon or your hands until you get a soft, sticky dough. If needed, sprinkle a little extra flour to help bring it together, but it should stay softer than regular pizza dough.
- Cover the bowl with a towel or plastic wrap and let the dough rise in a warm spot for 1–2 hours.
- 🍕 Toppings I Use:
- Homemade pizza sauce (tomato sauce + dry oregano + dry basil + a dash of brown sugar + salt)
- Soft mozzarella cheese
- Sliced zucchini, tomato, onion
- Kalamata olives
- Leftover cooked meat (I used katleti—Russian-style meatballs made with ground turkey and chicken, onion, carrot, herbs, and spices)
- 🍕 Baking:
- Preheat oven to 425°F (220°C).
- Shape your crusts on a parchment-lined baking sheet. Bake the crust alone for about 7 minutes.
- Remove from oven, spread sauce, and add toppings.
- Return to oven and bake another 13–15 minutes, until golden and bubbly.
