horitaki “greek” avocado toast

horitaki is a traditional greek salad that’s uniquely made without lettuce — so i’m taking inspo from that & layering it over a creamy, greek-goddess–inspired avocado toast. then topping it with omega-3–rich sardines caramelized in yo mama's foods cooking wine for that extra depth of flavor.

Ingredients
greek goddess dressing
- 1/4 cup1/4 cup1/4 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 2 Tbsp2 Tbsp2 Tbsp Sherry Cooking Wine - Yo Mama's Foods
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Greek Goddess Dried Dressing Blend - Afternoon Foods
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 pinch1 pinch1 pinch Red Pepper Flakes

horitaki salad
- English Cucumber, finely chopped
- Tomato, finely chopped
- Bell Pepper, finely chopped
- Red Onion, finely chopped
- Kalamata Olives, finely chopped

- Peperoncini Peppers, finely chopped
- Capers, finely chopped
- Feta Cheese
toast
- Sardines, Canned

- Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a jar, combine all ingredients for greek goddess dressing.
- chop all ingredients for a horitaki salad, then add to a bowl with ~Âľ of the greek goddess dressing; refrigerate for at least 30 minutes.
- with remaining greek goddess dressing, mix with mashed avocado.
- to a skillet, then add sardines, vinegar, salt, & pepper to lightly caramelize.
- remove sardines to a plate, then add bread to a skillet over medium heat for 2-3 minutes to “toast” bottom of bread.
- to build toast, remove toast from skillet then layer on: mashed avocado mixture → horitaki salad → crispy sardines → any other garnishes.
- serve with your favorite chips, extra horitaki salad, & any other sides you like!
