Italian Sausage & Mushroom Pasta

Ingredients

- 2 cups2 cups2 cups Crimini Mushrooms, chopped

- 1 cup1 cup1 cup Chicken Broth, Low Sodium

- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese, grated

- 1 lb1 lb1 lb Rigatoni Pasta

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large sauté pan, heat one tablespoon of olive oil.
- Add the sweet Italian sausage, removing the casings if needed. Cook, breaking it into crumbles with the back of a spoon, until browned and fully cooked, about 4 minutes. Removed from the pan and set aside.
- Add the remaining one tablespoon of olive oil. Add minced garlic and shallots. Sauté until soft and fragrant, about 1 minute.
- Add chopped mushrooms to the same pan, leaving all the brown bits in the pan. Cook until they’re golden and just starting to release their juices, 3-4 minutes.
- Pour in the white wine and give it a stir. Scrape up all those tasty browned bits stuck to the bottom of the pan with a wooden spoon. Simmer until the mushrooms almost completely soak up the wine, about 4 minutes.
- Add chicken stock, stir. Simmer for 2 minutes.
- Add heavy cream and stir. Simmer for 2 minutes.
- Add freshly grated Parmesan cheese and stir.
- Add the cooked sausage back to the pan, along with any juices it left behind—season with salt and pepper to taste.
- Toss in the pasta.
Notes
Cook your pasta in well-salted water until it’s just al dente—it should still have a little bite to it. Before you drain it, scoop out a cup of that starchy pasta water. Drain the pasta and add it straight into the pan with the sauce, tossing everything together so the pasta can soak up all that creamy, flavorful goodness. If the sauce feels a little thick, add a splash of the reserved pasta water until you hit that perfect consistency.
