- Bring a pot of well-salted water to a boil. Add potatoes and cook until just fork-tender, 12–15 minutes. Drain and let steam dry for 5 minutes.
- Transfer potatoes to an 8×8 baking dish. Smash gently, drizzle with olive oil, and season with salt and pepper. Press lightly to form an even base.
- In a bowl, whisk together coconut milk, nutritional yeast, garlic powder, pepper, and smoked paprika.
- In a separate bowl, toss chicken, Canadian bacon, cherry tomato powder
- Pour about one-third of the dairy free binder sauce over the potatoes.
- Add the chicken mixture evenly over the top. Drizzle remaining binder over everything.
- Cover tightly with foil and bake at 375°F for 1 hour.
- Remove foil and bake an additional 40 minutes, until chicken is cooked through and the top is lightly caramelized.
- Rest 10–15 minutes before slicing and serving.
