Process

  1. Bring a pot of well-salted water to a boil. Add potatoes and cook until just fork-tender, 12–15 minutes. Drain and let steam dry for 5 minutes.
  2. Transfer potatoes to an 8×8 baking dish. Smash gently, drizzle with olive oil, and season with salt and pepper. Press lightly to form an even base.
  3. In a bowl, whisk together coconut milk, nutritional yeast, garlic powder, pepper, and smoked paprika.
  4. In a separate bowl, toss chicken, Canadian bacon, cherry tomato powder
  5. Pour about one-third of the dairy free binder sauce over the potatoes.
  6. Add the chicken mixture evenly over the top. Drizzle remaining binder over everything.
  7. Cover tightly with foil and bake at 375°F for 1 hour.
  8. Remove foil and bake an additional 40 minutes, until chicken is cooked through and the top is lightly caramelized.
  9. Rest 10–15 minutes before slicing and serving.
