Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

  1. Cook by your preferred method, then proceed to step #2. For me, I prefer to bake mine in the oven, laying the bacon on a parchment lined baking sheet. I lay strips down, slightly over lapping, then cover with another piece of parchment paper. Place the tray in a COLD oven, set it to 385° then let that bacon get cooking. I flip each strip a few times as it bakes until the strips are golden brown and crispy. Bake times vary a bit depending on how fatty the bacon is.
  2. Once bacon is crispy, remove from the oven and place on a paper towel lined plate and cool slightly. While it’s still a little warm, dice into bite sized bits, toss in a bowl then add the Adobo seasoning and salt, tossing to coat. Set aside.

  1. Line a standard baking sheet with parchment paper and set aside.
  2. Add flour, baking powder, sugar, Adobo blend and salt. Whisk to combine then add the cheese bacon bits and chives, toss together with your fingers until well combined with the cheese, bacon and chives equally dispersed.
  3. Pour whipping cream into dry ingredients and mix until well incorporated, then place dough on a flour dusted surface and knead gently to bring it all together, pressing and shaping into a 7½“ x 7½“ square about 1” thick.
  4. Using a sharp knife and cutting straight down (vs a sawing motion) cut the square into 1½“ strips, then cut those strips into 1½“ cubes. You should get 25 biscuits.
  5. Place biscuits on the prepared baking sheet, 2” apart. Brush tops of each biscuit with more cream and a little sprinkle of chives and adobo seasoning if desired.
  6. Place the baking sheet in the refrigerator for 30-40 minutes until they are well chilled and preheat your oven to 450°.
  7. Once biscuits are chilled, remove from the fridge and bake for 14-16 minutes or until edges of the biscuits are golden brown.
  8. Remove from the oven, let them sit for just a few minutes, then enjoy!

Notes

These do freeze well! Instead of putting biscuits in the refrigerator, place biscuits on a parchment lined cooling rack, then place that inside a baking sheet. Slide that into your freezer and once frozen solid, you can place frozen biscuits in a freezer safe zipper bag. To bake, remove the desired number of biscuits from the freezer. Preheat your oven to 450°, place frozen biscuits on a parchment lined baking sheet and allow them to come to temperature for about 15 minutes. Place in your oven and bake as directed above.
