Miso Maple Salmon (Edit recipe)

This recipe came to me on the fly as I was making dinner one night. The salmon is great on its own but when you put it in a taco it’s a whole other level! I’ve made this for friends and clients and everyone is obsessed!! If you want to switch it up, try using cod, halibut or shrimp. Note that your cooking times will vary depending on what you choose. The tacos also pair well with a cabbage cilantro slaw dressed in lime juice and soy sauce. You could also add a little may to make it a creamy slaw!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Mix all ingredients, except the salmon fillets, together to make the marinade in a medium sized bowl.
  2. Place salmon in the bowl and toss with the marinade. At this point you can let the fish marinate for a few hours, overnight or for no time at all.
  3. When you are ready to cook the salmon, preheat your broiler. Be sure to check that the rack is about 5 inches away from the flame.
  4. Meanwhile, line a baking sheet with foil or parchment paper. be sure to trim the parchment to prevent catching on fire under the broiler.
  5. Place salmon on the baking sheet. Distribute the extra marinade from the bowl over the salmon.
  6. Broil for about 10 minutes until browned and firm. Time will depend on thickness of the fillet and how you like your salmon cooked.
  7. Enjoy!

Notes

If you want to turn these into salmon tacos: Ingredients: tortillas (I like to use paleo/GF tortillas or flour tortillas) 1 avocado 1/2 of a lime or lemon, juiced salt nori sheets or seaweed snacks cooked miso maple salmon (from above) sesame seeds, for sprinkling Instructions: Toast tortillas in a pan or directly on a gas stove. Set Aside. Mash avocado with lime juice and a pinch of salt in a small bowl. Divide avocado mash over the tortillas, layer on your seaweed and salmon. Sprinkle with sesame seeds and Enjoy!
