- Add protein powder, cacao powder, almond milk, maple syrup (if using), and salt. Mix until a thick, cookie-dough-like consistency forms. Add a splash more almond milk if needed.
- Scoop 1–2 tablespoons of dough into mini muffin molds and press down firmly.
- In a microwave-safe bowl, melt the ganache ingredients (chocolate, almond butter, coconut oil) on low, stirring until smooth.
- Pour ganache over each brownie bite.
- Top with sprinkles.
- Refrigerate for 30 minutes until set.
