Old Fashioned Pumpkin Bread
This old fashioned pumpkin bread recipe is made with nutritious almond and cassava flours, sweetened with real maple syrup, and studded with chocolate chips for a healthier twist on a classic fall favorite.
Process

- Preheat oven to 350°F (175°C). Spray bread pan with nonstick cooking spray.
- In a large bowl, whisk eggs, pumpkin puree, maple syrup, vanilla, and almond butter until combined.
- In another bowl, whisk baking soda, almond flour, cassava flour, salt, and pumpkin pie spice.
- Add dry ingredients to wet, stir until combined. Fold in chocolate chips. Stir in melted butter.
- Pour batter into prepared pan, spread evenly. Top with extra chocolate chips if desired. Bake 50 minutes.
- Cool 10 minutes in pan, then remove and transfer to cooling rack.
