Nutritious, delicious and perfect for fall.  These pumpkin protein cookies give you everything you need. Protein, fiber, and flavor.  You can easily substitute banana for pumpkin in this recipe and a single batch makes around 20 or so cookies.

  1. Pre heat oven to 350 degrees. In a large mixing bowl combine all the wet ingredients and mix together thoroughly.
  2. Add your dry ingredients and mix until well combined. Batter will have a mousse like texture.
  3. Fold in your chocolate chips, spoon batter using a tbsp and place on a parchment lined baking sheet
  4. Bake in the oven for 15 minutes. Remove and let cool.
