Pumpkin Spice Chocolate Chip Cookies
For that sweet tooth craving of chocolate chips plus the fall time craving of pumpkin spice, try these delicious pumpkin spice chocolate chip cookies!
Ingredients
- 2.5 cups2.5 cups2.5 cups All Purpose Flour
- 0.5 tsp0.5 tsp0.5 tsp Pumpkin Pie Spice

- 1 tsp1 tsp1 tsp Baking Soda
- 1 cup1 cup1 cup Butter, Unsalted - Kerrygold, Softened, room temperature
- 0.75 cup0.75 cup0.75 cup Granulated White Sugar

- 0.75 cup0.75 cup0.75 cup Light Brown Sugar
- 2 whole2 whole2 whole Eggs
- 1 tsp1 tsp1 tsp Salt

- 1 tsp1 tsp1 tsp Vanilla Paste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine dry ingredients together in a bowl (flour, pumpkin spice, & baking soda). Using hand or stand mixer, whisk until mixture is fluffy.
- In separate bowl, add butter, granulated sugar, & brown sugar. Whisk until mixture is fluffy.
- Add eggs, salt, & vanilla paste. Whisk until combined.
- Combine dry ingredients with wet ingredients. Stir until just combined.
- Add chocolate chips & incorporate into dough.
- Let cookie dough rest in the fridge (uncovered) for 30 minutes.
- Preheat oven to 375
- Prepare 2 baking sheets with parchment paper. Use an ice cream or cookie scoop to scoop dough onto sheets. Make sure 2-inches of space between cookies.
- Bake for 9-11 minutes (until edges brown)
- Rest for 5 minutes on baking sheets & 10 minutes on cooling rack before serving or storing.
Notes
Pumpkin Spice Seasoning —feel free to add an extra dash or two of pumpkin spice seasoning (I know some of love our pumpkin spice so “indulge” but don’t let it over rule). Chocolate Chips — Also feel free to throw in more chocolate chips to your desired amount. (Again… I get some of us are choco-holics! So “indulge” but it’s one of those things to not let it over rule). Cooking Time — For that slight tougher but still chewy texture, I would suggest cooking for 10 minutes. If you are like my significant other and myself, and love your cookies on the softer side, I would suggest baking for 9 minutes.
