- 1 Tbsp1 Tbsp1 Tbsp Organic Pumpkin - Thrive Market

- 1 Tbsp1 Tbsp1 Tbsp Espresso Powder
- 2 tsp2 tsp2 tsp Pumpkin Pie Spice - Primal Palate

- 2 Tbsp2 Tbsp2 Tbsp Almond Flour

- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder
- 1 tsp1 tsp1 tsp Baking Soda

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 F and line a baking sheet with lightly greased parchment paper.
- Combine the almond butter, coconut sugar, and egg.
- Add the remaining ingredients, stirring well. The cookie dough will be fairly wet, like a batter.
- Use a cookie scoop to scoop large cookies onto the baking sheet and press down with your hand. The batch makes 6 large cookies, or 12 smaller... I prefer the large cookies!
- Transfer to the oven and bake for 12 minutes, or until baked through and crisp.
- Carefully transfer to a cooling rack. Allow to fully cool before serving!
