Reeses’s Eggs Copycat (with cottage cheese!)
These healthier Reese’s eggs are a game-changer! Made with cottage cheese (you can’t taste it!) for protein and coconut flour to keep the carbs lower, they’re a healthy no-bake treat that is a great swap for the classic with more protein and less sugar. Perfect for Easter, meal prep, or a quick sweet snack!
Ingredients
- 0.5 cup0.5 cup0.5 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter

- 0.333 cup0.333 cup0.333 cup Coconut Flour, can also sub vanilla protein powder

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Pure Maple Syrup, Or monk fruit/granulated sugar
- 0.333 cup0.333 cup0.333 cup Dark Chocolate Gems - Hu
- 0.5 tsp0.5 tsp0.5 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything up to the chocolate together in food processor until a dough forms.
- Form into egg shapes and place on a baking sheet lined with parchment paper. Freeze for 20 min.
- Melt the chocolate and coconut oil until smooth.
- Dip the eggs into the chocolate and cover completely. Place back on baking sheet and freeze for 10 min.
- Store in fridge or freezer.
Notes
These aren’t overly sweet (on purpose!) but if you need it sweeter, definitely err on the side of 2 tbs of sweetener of choice. If you're using protein powder instead of coconut flour, you can skip the maple syrup or just use 1 TBS.
