Sausage Tortellini Soup
This is THE soup of the season for me! I know I'll be making this on repeat - it's easy, it's tasty, and it's husband approved (and Mom approved, she came over for lunch and really enjoyed it)! One of my instagram followers requested a soup with tortellini in it, and who am I to say no?! I made a sausage soup last year that I based this off of, adding tortellini and some other fun components to the broth to take it up a notch. I highly recommend this!
Ingredients
- 16 oz16 oz16 oz Italian Sausage, Mild

- 0.5 whole0.5 whole0.5 whole Yellow Onion, chopped
- 2 whole2 whole2 whole Celery, sliced thin
- 2 Tbsp2 Tbsp2 Tbsp Whole Wheat Flour
- 2 Tbsp2 Tbsp2 Tbsp Garlic, or 3 cloves

- 32 fl oz32 fl oz32 fl oz Chicken Broth, Low Sodium

- 28 fl oz28 fl oz28 fl oz Diced Tomatoes
- 0.5 tsp0.5 tsp0.5 tsp Italian Seasoning

- 9 oz9 oz9 oz Tortellini
- 0.5 cup0.5 cup0.5 cup Heavy Whipping Cream
- 2 cup2 cup2 cup Spinach

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large soup pot, over medium-high heat, brown the sausage.
- Once you no longer see pink, transfer to a bowl and set aside.
- In the same pot, in the sausage fat, add the onion and celery and cook until starting to soften.
- Add the flour and garlic, stirring for 1 minute.
- Pour in the broth, stirring constantly, until the flour dissolves and broth becomes cloudy.
- Add canned tomatoes, Italian seasoning, and sausage into the pot. Give it a stir, increase the heat to high and bring to a boil.
- Once boiling, add the tortellini and stir it in.
- Lower the heat to a simmer and simmer for 5 minutes.
- Stir in the spinach and heavy cream.
- Add any salt and pepper to taste.
- Serve hot!
