slow cooker lasagna soup
all the cozy, cheesy comfort of classic lasagna — but in a big ol’ bowl of soup 🍲🤍
this hearty slow cooker soup is loaded with veggies, savory meats, melty cheeses, & whatever gluten-free or low-carb lasagna noodles you love. make it extra thick like a traditional lasagna, or add more broth for a true slurpable soup moment — totally your call.
finished with a homemade “ricotta” made from one of my favorite staples: cottage cheese 😌
set it, forget it, & enjoy a full-on casserole-in-a-bowl situation.
Ingredients
- 20 oz20 oz20 oz Bell Pepper and Onion Blend, Frozen
- 10 oz10 oz10 oz Baby Bella Mushrooms, sliced
- 10 oz10 oz10 oz Zucchini, or any other veggies you like, diced
- 1 lb1 lb1 lb Ground Beef, or ground meat of choice

- 1 lb1 lb1 lb Italian Sausage, Mild

- 32 oz32 oz32 oz Original Marinara - Yo Mama’s Foods

- 32 oz32 oz32 oz Beef Broth, more or less depending on how thick you like your soup!

- 2 Tbsp2 Tbsp2 Tbsp Amore [Italian] Seasoning - Primal Palate

- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper, to taste
- 8 oz8 oz8 oz Hearts of Palm Lasagna, may sub any gluten-free or low-carb lasagna noodle
- 1/2 cup1/2 cup1/2 cup Parmesan Cheese, + extra for serving

- 1/2 cup1/2 cup1/2 cup Mozzarella, + extra for serving
- 1 cup1 cup1 cup Cottage Cheese
- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 2 Tbsp2 Tbsp2 Tbsp Parmesan Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a skillet, sauté veggies until tender.
- transfer to a slow cooker.
- add beef & sausage to a skillet & brown.
- transfer cooked meat to crockpot along with remaining soup ingredients, except GF lasagna noodles & cheese.
- with 20-30 minutes left, add GF lasagna noodles of choice
- with ~10 minutes left, stir in mozzarella & parmesan cheese.
- to make homemade ricotta, add all ingredients to a food processor or use an immersion blender to combine.
- when serving, dollop homemade ricotta on top of soup, along with additional mozzarella & parmesan.
