- Salt and Pepper, to taste

- Cook the pasta according to the packaging instructions. Stir frequently. Reserve some of the pasta cooking water to thin the sauce if needed.
- Sauté garlic, onions, and pancetta in olive oil over medium heat in a saucepan. Add vodka, cook for 1 minute, then add the tomatoes. Reduce heat and simmer 10 mins. Pour in heavy cream and Parmigiano cheese, stirring to combine, keeping heat on low.
- Add red pepper flakes and salt and pepper to taste. Combine with pasta, top with cheese, and garnish with herbs
