- 1 cup1 cup1 cup Powdered Sugar
- 1.5 cup1.5 cup1.5 cup Heavy Whipping Cream
- 1 tsp1 tsp1 tsp Vanilla Extract

- 1 tsp1 tsp1 tsp Lemon Extract

The Cake
- Preheat oven to 325°F. Grease two round 8-inch pans and line them with parchment paper.
- Beat eggs at high speed for 3-5 minutes until light and fluffy.
- With the mixer still running, gradually add the olive oil in a thin drizzle and beat until thick and creamy.
- Add the buttermilk and the vanilla cake mix.
- Beat on low speed for one minute until well combined.
- Stir in the chopped pecans.
- Divide the batter evenly between the cake pans and bake for 20-25 minutes.
- Cool in baking pans for 5-10 minutes before unmolding.
The Cream
- Beat cream cheese and powdered sugar on low speed until incorporated.
- Increase speed to medium-high and continue to beat until well combined.
- With the mixer still running, gradually add the heavy cream and extracts in a thin drizzle and beat until thick and creamy.
- Allow cakes to cool completely before frosting.
- Decorate with pecans if desired.
