Spaghetti Squash Bolognese
I love squash and all of the yummy winter ones are in season, so naturally I had to try a spaghetti squash recipe and I loved it!
I was honestly so impressed. It tastes really good, like squash but not super squashy lol. Of course, it is also super nutrient dense, containing many vitamins, beta-carotene, protein, fiber, and antioxidants for skin health and collagen-boosting benefits
Ingredients
- 2 whole2 whole2 whole Spaghetti Squash
- 2 whole2 whole2 whole Carrots, diced
- 2 whole2 whole2 whole Celery, diced
- 4 clove4 clove4 clove Garlic, minced
- 0.5 whole0.5 whole0.5 whole Onion, diced
- 1 lb1 lb1 lb 85% Lean Ground Beef - US Wellness Meats
- 0.5 tsp0.5 tsp0.5 tsp Real Salt - Redmond
- .25 tsp.25 tsp.25 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning - Clean Monday Meals
- 1 cup1 cup1 cup Marinara Sauce

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees Fahrenheit
- Slice spaghetti squash horizontally and scoop out seeds
- Place spaghetti squash on a prepared baking sheet, spray or rub on olive or avocado oil on top and season with salt and pepper
- Roast for 40 minutes and let cool
- In a pan over medium heat, add garlic and onion. Sauté for 2 minutes
- Add carrots and celery. Cook for 5 minutes
- Add ground beef and seasoning, crumble and cook for 5-7 minutes until brown throughout
- Lower heat and add marinara until combined and thickens. Remove from heat
- Using a fork, pull out spaghetti squash strands into the center
- Pour in Bolognese and mix!
- Add any toppings and enjoy
