Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 350u00b0F (175u00b0C) and line a baking sheet with parchment paper.
  2. Add full-fat cottage cheese to an immersion blender or food processor and blend until smooth.
  3. Add to the cottage cheese mixture the ground chia seeds (see notes below!), egg, sweetener, vanilla, baking powder, and a pinch of salt directly into the blender. Blend or pulse just until combined.
  4. Let the mixture rest in the blender for 5-10 minutes to allow the chia seeds to absorb moisture.
  5. Scoop and shape 6 cookies onto the prepared baking sheet.
  6. Gently press chopped fresh strawberries into the tops of each cookie.
  7. Bake for 15u201318 minutes, or until just set and the bottoms are slightly golden brown.
  8. Let cool completely before lifting.

Notes

Letting the batter rest is key! Chia seeds need time to soak up moisture for the best consistency. Store cookies in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months.
