Ingredients

- 2 oz2 oz2 oz Parm Crisps

- 2 oz2 oz2 oz Fine Ground Sea Salt Almond Flour Crackers - Simple Mills, or any grain-free simple mills crackers
- 0.25 cup0.25 cup0.25 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 2 Tbsp2 Tbsp2 Tbsp Amore [Italian] Seasoning - Primal Palate

- 2 lb2 lb2 lb Ground Beef, or ground meat of choice

- .25 cup.25 cup.25 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Pepperoni, finely chopped
- 0.25 cup0.25 cup0.25 cup Salami, Uncured, finely chopped

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Olive Paste Black Oregano - Argilos, may sub any flavor or finely chopped olives

- Mozzarella Pearls, for stuffing each meatball

for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
supreme pizza stuffed meatballs
- preheat oven to 400.
- add the parm crisps, crackers, monk fruit, & seasoning to a food processor & blitz a few times into a finer crumble.
- to a bowl, add crunchy mixture + remaining meatball ingredients.
- using a medium cookie scoop, scoop out meat mixture, then add a mozzarella pearl to then center & form meatball around it.
- place meatballs on a lined baking dish, then bake for ~15 minutes.
for serving
- option to make mini pizza crusts following my recipe from my lunchables or use any pizza crust of choice.
- heat your favorite pizza or marinara sauce (or make my creamy pizza sauce).
- layer on your mini pizza crust sauce, supreme pizza stuffed meatballs, & top with parmesan cheese.
- serve with your favorite italian salad - like my homemade "olive garden" inspired salad!
