Tater Tot Casserole (GF)
We lived in the Midwest for about 18 months and Tater Tot casserole is a common and comfy dish. One skillet is all you need to create this filling meal.
Ingredients
- 4 oz4 oz4 oz Pancetta, Diced or you can use 4 strips of bacon
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- .5 tsp.5 tsp.5 tsp Black Pepper
- .5 whole.5 whole.5 whole Onion, Diced
- 2 pieces2 pieces2 pieces Celery, Diced
- .5 whole.5 whole.5 whole Bell Pepper, Diced
- 2 cups2 cups2 cups Rotisserie Chicken, Diced in 1” cubes
- 1 Tbsp1 Tbsp1 Tbsp Organic Garden Ranch Seasoning Mix - Primal Palate, or any ranch dressing mix
- 1 cup1 cup1 cup Sour Cream
- 14 oz14 oz14 oz Cream of Chicken Soup, gluten free
- 1 cup1 cup1 cup Sharp Cheddar Cheese, Grated
- 16 oz16 oz16 oz Frozen Tater Tots

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- In a large skillet add oil, pancetta, and pepper. Stir and cook on medium heat for about 8 minutes until done.
- Add onion, celery, and bell peppers and stir. Cook for 5 minutes.
- Add chicken, ranch dressing mix, sour cream, soup, and cheese then stir. Turn heat off.
- Layer the tater tots on the top in whatever design you like.
- Cook in oven for 40-45 minutes until hot and bubbly.
Notes
You can use uncooked chicken breast or thighs if you like. Just dice up about 2 cups worth and add it with the pancetta and cook until done, then add the vegetables. You can add extra vegetables if you like. Zucchini and shaved Brussels sprouts work great.
