Tomato Pine Nut Salad
My mom makes this Tomato Pine Nut Salad all the time for holidays and when we have people over, so I started making it for when I have people over! All of my friends love it!
Ingredients
- 0.333 cup0.333 cup0.333 cup Pine Nuts, can sub sunflower or other nuts
- 1 bunch1 bunch1 bunch Parsley, fresh, chopped
- 2 pint2 pint2 pint Grape Tomatoes, halved
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- .25 cup.25 cup.25 cup Balsamic Vinegar
- 1 pinch1 pinch1 pinch Kosher Salt, to taste
- 1 pinch1 pinch1 pinch Black Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350
- Toast nuts on a rimmed baking sheet, tossing halfway through, until golden brown (about 5-7 minutes)
- Once toasted, let the nuts cool
- Combine pine nuts, parsley, and tomatoes in a large bowl and put to the side
- Combine dressing ingredients in a smaller bowl
- Before serving, add dressing to salad and toss
Notes
This simple recipe can be doubled or tripled for a crowd! It’s a real crowd-pleaser and pairs well with any grilled protein during any season. I personally love enjoying this easy salad in the winter with a steak or grilled chicken!
