Quick, easy, and delightfully Southern, these fast-fix Tomato Toasts are everything you love about tomato sandwiches, but in bite-size form. These perfect summer appetizers come together in just minutes—simply slather your favorite mayo on toasted brioche bread, then sprinkle with seasoned cherry tomatoes, and fresh basil.

Look for brioche in the bakery section of your grocery store; made with extra butter, eggs, and sugar, it has a rich flavor that’s a step up from regular “white” bread.
