Grain-Free Spicy Chicken Tenders

Recent research found that eating peppers will reduce the incidence of death from heart disease by 13%.
Ingredients
- 2 lb2 lb2 lb Chicken Tenders
- 1 cup1 cup1 cup Cassava Flour
- 444 Eggs, (or 1 cup olive oil)
- 1 tsp1 tsp1 tsp Garlic Powder
- 1/2 tsp1/2 tsp1/2 tsp Onion Powder
- 1/4 tsp1/4 tsp1/4 tsp Paprika
- 1 tsp1 tsp1 tsp Cayenne Pepper
- 1 tsp1 tsp1 tsp Salt
- 1/2 tsp1/2 tsp1/2 tsp Black Pepper
- 2 Tbsp2 Tbsp2 Tbsp Medium Buffalo Sauce, or any buffalo sauce (we suggest Noble Made)
- Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees F.
- Pat dry chicken tenders and season with salt and pepper.
- Whisk eggs and hot sauce in a large bowl.
- Add cassava flour and seasonings in another large bowl and mix together.
- One at a time, dredge the chicken tenders first in the egg mixture and then in the cassava flour mix. Place on parchment paper lined baking sheet and spray each one with a little cooking spray, which will help make them brown and crispy.
- Place the tray on top shelf and bake for 8-10 min. Turn broiler on high and cook tenders for an additional 3 min.
- Flip tenders and cook on 425 degrees for 2-4 min, flip and cook on broil for an additional 3 min. Remove from oven and let cool. If you like it saucy, toss in buffalo sauce, dip in ranch and enjoy!

Feel free to omit seasoning and/or hot sauce if you’re not one for spice.
