Guilt Free Ice Box Cake
Icebox cake was a favorite desert of mine growing up. It layers creamy pudding, whipped cream, and graham crackers into one delicious treat. I knew a healthier version needed to be out there, and this one is a gut healthy and guilt free home run!
This anytime desert features a probiotic rich and hormone healthy chocolate protein pudding, a sweet walnut cream, and seed and nut flour sweet crackers. It is sure to be your new go to treat!

Pudding Ingredients
- 2 cups2 cups2 cups Unsweetened Vanilla Almond Milk
- 0.25 cup0.25 cup0.25 cup Chia Seeds
- 0.333 cup0.333 cup0.333 cup Chocolate Protein Powder (EarthChimp)
Walnut Cream
- 1.5 cups1.5 cups1.5 cups Organic Walnuts, shelled
- 0.5 cup0.5 cup0.5 cup Unsweetened Vanilla Almond Milk
- 0.25 cup0.25 cup0.25 cup Honey
Crackers
- 24 pieces24 pieces24 pieces Honey Cinnamon Sweet Thins (Simple Mills)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- line loaf pan with parchment paper.
- add simple mills crackers to the bottom of the pan.
- blend pudding ingredients until creamy and smooth.
- spoon on top of crackers and spread evenly
- place in refrigerator to set.
- blend walnut cream ingredients together.
- remove cake from refrigerator and add another layer of crackers.
- top with walnut cream and place in refrigerator to set.
- top with dried mango, dried coconut, dried cacao nibs.
- place in freezer for 20 minutes prior to serving.
- add raspberries and mint for garnish.
