Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. On a sheet pan with a silicone mat or parchment paper, place several scoops of ice cream (choose wisely; always check the list of ingredients) and then place another sheet of paper on top.
  2. Flatten your ice cream balls so that they have the same diameter as the pizzelles.
  3. Place the sheet pan in the freezer to allow them to harden well.
  4. In a small bowl, put the sifted tigernut flour, arrowroot, cassava, and salt. Mix well.
  5. Place the eggs in a separate bowl, add the maple sugar and maple syrup, and stir well with a whisk.
  6. Add the mixture of dry ingredients, mix well, and then add the melted shortening.
  7. Cook the pizzelles following the instructions for your pizzelle maker.
  8. Let them cool well, and in the meantime, melt the chocolate with the coconut oil.
  9. Assemble your sandwiches with two pizzelles and a disc of ice cream in the middle, then dip one side in the melted chocolate dip and add toasted, chopped almonds for a crunchy touch.
