5 Minute Fiesta Tot Casserole (Gluten-Free, Vegan)
With only 5 minutes of prep time, you’ll have this delicious, flavorful, allergy-friendly casserole on the table in under 30 minutes. A terrific way to utilize pantry staples liked canned beans and vegetables, plus there’s tater tots, so the kids will definitely eat it 🙌🏻
Ingredients
- 2 tsp2 tsp2 tsp Plant-Based Butter, For greasing baking dish
- 15.5 oz15.5 oz15.5 oz Black Beans, From can; drained and rinsed

- 15.5 oz15.5 oz15.5 oz Corn, From can; drained
- 10 oz10 oz10 oz Diced Tomatoes & Green Chilies - Rotel, I used mild; drained
- 2.25 oz2.25 oz2.25 oz Black Olives, From can; drained (I used sliced black olives)

- 1 Tbsp1 Tbsp1 Tbsp Taco Seasoning - Primal Palate

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 8 oz8 oz8 oz Plant-Based Queso Style Dip, From 8oz container
- 4 cups4 cups4 cups Tater Tots, Frozen, Gluten-Free (can use mini tots or regular size)
- 0.333 cup0.333 cup0.333 cup Green Onion (Scallion), Sliced (optional)

- 2 Tbsp2 Tbsp2 Tbsp Corn Tortilla Chips, Crushed (optional)
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Jalapeño Pepper, Fresh; sliced (optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees. Grease 10-inch ceramic baking dish with plant butter.
- In medium bowl, combine canned items. Stir in taco seasoning & lime juice.
- Spread mixture in even layer in baking dish.
- Evenly spread queso-style dip over the top.
- Arrange tater tots, side-by-side, in a single layer.
- Bake 20-25 minutes. If tots are not as crisp as you like, place under broiler for 30-seconds to 2 minutes.
- Garnish with sliced green onions, crushed tortilla chips and jalapeños, if desired. Delicious served with a side of sliced avocado or topped with fresh guacamole. Serves 6.
Notes
In place of 8oz container of plant-based, queso style dip, 1 1/4-to- 1 1/2 cups shredded vegan cheddar cheese can be substituted. Reheats well as leftovers in oven or microwave.
