Brownie Waffle Taco Sundaes
These gluten-free sundaes are the perfect treat to enjoy any time of the year, but I love to make for the boys the morning of their birthday or any celebration really!
Ingredients
- 1.5 cups1.5 cups1.5 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 0.5 cup0.5 cup0.5 cup Cacao Powder, Raw
- 0.5 cup0.5 cup0.5 cup Classic Monkfruit Sweetener (with Erythritol) - Lakanto

- 2 tsp2 tsp2 tsp Baking Powder

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda

- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 1 cup1 cup1 cup Whole Milk, (or milk of choice)
- 2 whole2 whole2 whole Eggs, Pastured
- 4 Tbsp4 Tbsp4 Tbsp Butter, Unsalted, melted & cooled

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 0.5 cup0.5 cup0.5 cup 100% Unsweetened Chocolate

- 14 oz14 oz14 oz Dairy-Free Sweetened Condensed Milk (click for recipe)

- 2 cups2 cups2 cups Heavy Whipping Cream, organic
- 2 tsp2 tsp2 tsp Vanilla Extract

- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 bunch1 bunch1 bunch Rainbow Sprinkles, dye-free

- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

- 1 bunch1 bunch1 bunch Coconut Flakes, Unsweetened
- 1 bunch1 bunch1 bunch Walnuts, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Optional: use a storebought vanilla ice cream or make my homemade version: add all ice-cream ingredients to a blender and combine. Add to a glass storage container and freeze overnight.
- Add flour, cacao powder, sweetener, baking powder, baking sofa, and salt to a bowl and combine.
- Add milk, eggs, melted butter, vanilla to a bowl and combine.
- Add wet ingredients to dry ingredients and combine.
- Fold in chocolate chips.
- Add 1/4 cup of batter to a waffle pan, I use a 4-pan mini waffle pan. Cook for 5-6 minutes.
- Assemble waffles on taco platter, add a small scoop of ice-cream to each waffle taco and top with dye-free sprinkles, maple syrup, coconut flakes, bits of walnut, etc. ENJOY!
