Sopa de fideo is a comforting and beloved Mexican noodle soup that holds a special place in my heart. Growing up, it was the dish that brought me so much comfort any time I was sick. It's made with thin, toasted vermicelli noodles (fideo) simmered in a rich, tomato-based broth, and seasonings. My favorite part of the recipe is interchanging the noodles to letters, fun shapes, or any gluten-free noodle! I like to add lime, mayo, or sour cream as a garnish to really bring the dish together. Provecho amigos!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large pot toast noodles. and onions in avocado oil.
  2. Once lightly golden brown, add tomato sauce and water. Continually stir to avoid having pasta stick together.
  3. Add seasonings (Bouillon, Salt, Garlic Powder) and add cilantro.
  4. Boil pasta/soup until pasta is al dente (roughly 9-11 min).
  5. Fideo is best enjoyed with a good squeeze of lime or if you’re feeling adventurous a touch of mayo (Don’t knock it till you try it). Garnish w cilantro to taste.
  6. Serve & Enjoy!
