Charoset is a traditional and symbolic dish for a Passover seder. Composed of diced apples, nuts, cinnamon, honey, wine, and sometimes dates, Charoset resembles the mortar and bricks the Jewish people used to build the pyramids during their enslavement according to the Torah. This recipe repurposes some of those ingredients into this unexpected and delicious Passover dessert.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your favorite frying oil to about 350F, and be prepared to moderate the temperature as you fry your fritters later. Carefully prepare the apple by finely dicing it like you would for a traditional charoset, and reserve for later.
  2. In a large bowl, whisk together the flours, kosher salt, cinnamon, and granulated sugar. Whisk in the eggs, vanilla extract, and club soda to form the batter. Next, fold in the crushed walnuts and diced apples. Depending on how juicy the apple is, the batter may become too loose and you may need a few additional tablespoons of Chickpea Flour.
  3. Allow the batter to rest and thicken for a few minutes before going to fry. Have a plate lined with paper towel ready for any finished fritters. Using a large spoon, scoop the batter and carefully drop directly into the oil, cooking about 4-5 at a time. They will be quite amorphous, so don’t be alarmed if they spread and create unique shapes. Fry until beautifully golden brown, about 3-5 minutes depending on how hot the oil is. Continue this process until all the batter is fried. When you’re ready to serve, dust with confectioner’s sugar and enjoy!
