Apple Fritter Pancake Bites
New year, new breakfast. These apple fritter pancake bites have all the cozy warm flavors of cinnamon spice, sweet juicy apples, and the buttery richness of pancake batter. You NEED to try this one!
Ingredients
- 3 Tbsp3 Tbsp3 Tbsp Water
- 111 Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.5 cup0.5 cup0.5 cup Pancake Mix, Scotty's Everyday Keto Pancake + Waffle Baking Mix
- 111 Apples, Honeycrisp
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil

- In a large bowl, whisk together the water, egg, vanilla extract, and pancake mix.
- Take your apple and cut it vertically into 1/4" - 1/2" slices.
- Using a mini circular cookie cutter, cut out circles from the apple.
- Dip the apple rounds into the pancake batter to coat.
- Heat a ceramic pan on medium-low flame.
- Coat the pan with 1-2 tbsp avocado oil.
- Place the pancake battered apples on the pan. Let them cook for a few minutes until golden on one side and flip.
- Cook for a few minutes more until golden on both sides.
- Serve with maple/coconut sugar, cinnamon, and pure maple syrup. Enjoy!
