Chicken Parmesan Pasta Bake

This easy dinner is a healthy twist on a classic, packed with protein and kid and husband (who don’t like cottage cheese) approved. Perfect for meal prep or a weeknight meal the whole family will love!
Ingredients
- 1 - 1.5 lb1 - 1.5 lb1 - 1.5 lb Chicken Breasts, Boneless Skinless, cut into cubes and cooked

- 4 cup4 cup4 cup Broccoli, chopped
- 1 cup1 cup1 cup Cottage Cheese, Low-Fat
- 2.5 cup2.5 cup2.5 cup Marinara Sauce
- 2 cup2 cup2 cup Mozzarella Cheese
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese

- 1 tsp1 tsp1 tsp Italian Seasoning

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 12 oz12 oz12 oz Chickpea Pasta, any pasta will work, cooked
- 0.5 cup0.5 cup0.5 cup Pasta Water
- 2 pinch2 pinch2 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend cottage cheese and marinara sauce together.
- Pour into a large bowl with broccoli, cooked chicken (seasoned with salt and pepper), parmesan cheese, 1/2 cup mozzarella cheese and seasonings.
- Cook pasta until al dente and reserve 1/2 cup of the water.
- Add pasta water and cooked pasta to the bowl with the chicken mixture and combine.
- Pour everything into a greased 9x13 baking dish and spread across the pan.
- Top with the rest of the mozzarella cheese and bake at 375 for 35 min.
Notes
You can cut prep time by using pre-cooked chicken and/or pre cut broccoli.
